We recently celebrated our Grand Opening at Pura Vida Urban Fitness and our amazing in-house nutrition coach – Melissa – gave a fantastic grilling demo. As part of the demo she shared with us a delicious – and inexpensive – side dish. It’s simple to make, healthy (and, if you happen to be a little kitchen-phobic, it requires no cooking). Here is her recipe:
2 cups frozen and thawed corn kernels
1 tablespoon extra-virgin olive oil
2 tablespoons apple cider vinegar
1 tablespoon lemon juice, to taste
1/4 teaspoon sea salt, to taste
1/2 teaspoon ground black pepper, to taste
4 cups no-salt-added cooked black beans, rinsed and drained
1 red bell pepper, cored, seeded and chopped
1/3 cup cilantro leaves, finely chopped
Put all ingredients except cilantro into a large bowl and toss until just incorporated. Cover and chill for about 2 hours. Add cilantro and toss again before serving.
Options to personalize your salsa: top with freshly sliced avocado or jicama, add some cayenne or chili powder for an extra kick, or throw in some cumin for a little smokey-ness. Why not? It’s summer!
